September is here, and we are excited to share this month’s PACE newsletter! Inside, you’ll find helpful health tips, a special invitation to celebrate National PACE Month, and updates from your care team.

🗓 Celebrate National PACE Month with Us

We invite you and your family to a special: PACE Open House

📅 September 22–26
⏰ 10:00 a.m. – 12:00 p.m.
      (between breakfast and lunch)
📍 At your PACE Center on your assigned day

✅ Participants will automatically take part during their regular center day — no RSVP needed.
✅ Family members are welcome! They may join in person at the center or virtually from home.

This event will include:

  • Fall Prevention & Safety Workshop: Learn how to stay steady, use equipment safely, and keep your home safe.
  • Recipe with Your Dietitian: Watch and learn how to prepare a healthy and tasty dish.
  • Creative Activity with Our Recreation Team: Enjoy a fun, hands-on activity.

🍅 Recipe of the Month

Cucumber Tomato Salad with Greek Dressing

Ingredients:

  • ½ medium red onion, cut into strips
  • 1 English cucumber (or 2 Persian),thinly sliced
  • 1 pint cherry tomatoes, halved
  • ⅓ cup crumbled feta (optional)
  • 2 tbsp sliced fresh basil
  • 2 tbsp chopped dill (or more basil)
  • ⅓ cup Greek Salad Dressing*

Make Your Own Dressing: Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper. Lasts 1 week in the fridge.

Directions:

  1. Soak onion slices in a bowl of ice water for 5 minutes.
  2. Mix cucumber, tomatoes, herbs, and feta in a bowl. Add drained onion.
  3. Pour dressing over the salad and toss.
  4. Let rest 10 minutes before serving. Keeps up to 4 days in the fridge.
