🍅 Recipe of the Month

Hearty Vegetable Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 potato, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • Salt & pepper to taste

Directions:

  1. Heat oil in a large pot. Add onion, carrots, and celery; cook until softened.
  2. Add potato, green beans, tomatoes, broth, and thyme.
  3. Bring to a boil, then simmer 20–25 minutes until vegetables are tender.
  4. Season with salt and pepper. Serve hot.
